spring fever

Yesterday's lunch (and my morning yoga) was accompanied by this view:

Springtime is the BEST!

Lunch was pretty fab too. Leftovers (salmon and asparagus- also perfectly steamed just til tender with olive oil and lemon- my mom taught me, and it's seriously the perfect way), and...

Spinach pie! The church ladies make these, and we buy 'em in bulk and keep them in the freezer, and then you can thaw them and have LUSCIOUS bread filled with spinach, onions, olive oil, and delicious herbs- I really couldn't tell you what they use (the recipe is Lebanese in origin) but MY it is tasty.



For dessert, some caramels from my stepmom's family in Taiwan. What a nice present! My mom and I were nibbling on them and neither of us could remember the last time we had straight-up caramels.

Dinner was unremarkable (leftover rice, baked tofu that was eh because I had to make it in a hurry cause we were rushing off to Good Friday service) but the salad we had with it was pretty durn tasty- cabbage, apples, and an Asian fusion type dressing that I made up- seasoned rice wine vinegar (which is really good enough to be dressing on its own), a little bit of honey and balsamic for sweetness, chili oil for zing, fresh thyme cause it's growing on the deck and it's delish, and just a wee bit of oil. It was a YUMMY salad!
Get stoked for my next post- I am going to give a tutorial to make my Mom's authentic homemade genuine Greek baklava, which is the BEST EVER.

hey there!! Thanks for leaving such a lovely comment on my blog!! You there my love, definitely have some of Taiwan's bestest candies ever!!! My mom grew up there and she told me she was ADDICTED to them. I would be too if those candies didn't pull out one of my fillings when I was a kid. hahaha so beware if you have fillings!!!
