quasi European

Today’s lunch involved elements that I, accurately or not, consider to be European. If nothing else, it followed a trip to an open air farmer’s market, rom whence I returned with a reusable bag. That, most definitely, is European!

The first part of my lunch was tomatoes stuffed with white beans:

YUMMMMMMMMMM! Yummy mcyummerson! Wow this was good. I hollowed out two tomatoes, pitched the seeds, and chopped up the pulp. Then I took 1/2 cup white beans (I’m fond of Great Northern) and mashed them up with the tomato, as well as olive oil, garlic powder, black pepper, and rosemary. Then I stuffed them back in the tomato:

SO easy, SO nutritious, SO fantastically good.

On the side, I had another of my carrot muffins:

I’m SO pleased with these. I actually froze the last few of them, since baked goods rotting is literally something I have nightmares about. This was the first one I’ve had that I’ve frozen and thawed, and it was JUST AS DELICIOUS! Score.

To round out my meal, yogurt that, by definition by my beloved Trader Joe, was “European Style”. I topped it with dried tart cherries (from my beloved Mediterranean Mix of dried fruit) and almonds:

Your carrot muffin looks really good. I almost always freeze my baked goods. Most things taste just as good and they last so much longer!
