sweet summer squash

All summer I’ve been meaning to hit up the farmer’s market that’s like ten minutes from my house, but Thursday mornings are tricky with jobs. Fortunately, today I finally made it!

Along with some gorrrrrrrrrrrrrrrrrrrrrgeous peaches, I got this adorable little stripey guy.

I saw it and went “aww”, and the girl selling the squash said it was her favorite because it’s sweeter than usual squash. She recommended it on a sandwich, just sauteed lightly in olive oil, so that’s exactly what I did.

It was indeed sweeter than regular squash! So yummy and flavorful with just olive oil, salt and pepper. Yay summer.

I had it atop more of my homemade bread, toasted, and with a hard boiled egg on the side for some protein.

I ended up spearing the leftover pieces of squash on my fork with the egg slices, which was a DELICIOUS combination that I highly recommend.

I dissolved a heaping tsp of instant coffee in 1/4 cup water. Then I threw that in a blender with a Splenda (I just found the packet staring at me on my desk… it’s the first artificial sweetener I’ve had in forev… forgive me) 1/2 a tbsp or so chocolate syrup, and a few cups of ice. Puree puree delish delish!

It separated, but fortunately I found a straw in our drawer randomly. Crisis averted! I stirred it all together from time to time. It was so delicious! It made more than that glassful, I kept refilling it!

That squash is soooo pretty! One of my favorite ways of eating squash is simply sauteing it. Your lunch looks perfect! :)
