I’ve had a wicked bad craving for a burrito bowl. I know Moe’s gets a lot of flack in the food blog world, but I LOVE IT. So there. Anyway, we had way too much food in the house to justify a trip there, so I made my own burrito bowl that was pretty darn successful.
I threw a bit of onion and garlic into a cooking spray-ed pan, then added shredded up chicken from last night, periodically desticking the pan with chicken drippings and veggie broth. This allowed the chicken to, er, 100% for sure finish cooking, and also infused it with some nice flava.
Then I added the rice mixture, which had been in our fridge since mom made it to go with a curry she brought to a work potluck. It was a mix of brown and basmati rice (rices?) along with corn and fresh herbs.
The rest of the salad was a bed of lettuce, brushed with just a hint of vinaigrette; diced tomatoes; diced avocado; salsa; and cheese.
It tasted great when it got all mixed together and gross looking! :D
