new twists

#1:

Instead of ground beef enchiladas, crumbled tofu enchiladas!

veg oil+ onion, garlic, and red bell pepper, diced+ tofu, pressed then crumbled+ a can of green chiles.

For the sauce, the star was rehydrated dried things:

Dried poblano peppers and tomatoes.

With spices and things:

Then given a whirr with my new toy!

Well, new. This was probably the first immersion blender ever made. Inherited, from my dear grandmother who had the cutting edge kitchen tools first.

To accompany the enchiladas, an attempt at recreating the cabbage slaw that came with the pupusas the other night:

It was aight. Nothing to write home about.

Enchiladas are hard to photograph well… my filling overfloweth.

Who needs bread and butter when there’s homemade English muffin and avocado?

When it’s cold and drizzly out but you still want a salad, get the best of both worlds by roasting your veggies first.

With Chobs and green tea, in my opinion a ridiculously perfect post-gym lunch.

#3:

Oatmeal raisin cookies are awesome, but in my opinion even AWESOMER are oatmeal date cookies, which my mama made.

Date Nut Cookies

3/4 cup all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 cup brown sugar
1 tsp. vanilla
1/2 cup vegetable oil
1/4 cup water
1 1/2 cups oats
1/2 cup chopped nuts (we use walnuts)
1 cup chopped dates

Sift together dry ingredients (flour through nutmeg). Combine wet ingredients. Stir together dry and wet, then fold in dates and nuts. Refrigerate for one hour. Drop by teaspoonfuls on a greased cookie sheet. Bake at 350* for 10-12 minutes.

Speaking of new twists, I am in need of one, rather badly, in my life. I am going *insane* in my house. As delightful as it is spending my entire life either working out or eating (and as dangerous as it would be if I cut out one of those activities but not the other) if I don’t get some mental stimulation and company soon, I am not sure what I will do.

I must get a job!

At the blogger meetup, we were talking about how we tried to keep our personal lives out of our blogs and keep things positive. However, I am relentlessly, nay, obnoxiously chipper most of the time, so consider this a relatable moment in the blog.

Oh gosh I can not even imagine not having a demanding overloaded schedule.. it sounds so nice! Like they say you always want what you do not have. I love jobs though because you have the opportunity to not only spend time in the public air but also meet awesome (and some not so awesome) individuals! GOOD LUCK hunting for a job.. if you do pursue a job!

Ooh, dates. I used to bake date muffins all the time, but I haven't bought them in ages. Methinks I need to hover around the dried fruits section a little longer--I've been meaning to try dried figs too.

Being similarly unemployed (and therefore also devoted to cooking/blogging/eating at the moment), I can totally relate!

Sometimes it is hard to believe I should be "taking advantage of this time to do whatever you want" when everyone else seems to productive and together.

I say, take a trip! I'm off to Austin tomorrow and have tried to wander the world as much (albeit as inexpensively...) as possible while I don't have a boss to answer to...

Also, I get LOTS of good food inspiration :)

I can totally relate as I'm also in that transition stage in ma vie right now. Just think that soon you will probably be crazy busy and miss leisure time! But job hunting sounds good, maybe more travel? I want to do some crazy travel adventure this summer but I have no idea what yet. I feel like going to Asia. Anyway, the point is, you have the time off to do those sorts of things!

And dates are delish.

Enchiladas are behooved to overfloweth. I wouldn't say they photograph badly; they're just properly unfined.

Legit for my entire freaking life I've been trying to convince people that avocado is a delicious butter alternative on toast (even better to me because it has that fruity aspect). I am thankful that my delusions are, in fact, not.

Ohhh, I've been there in those stressful job-hunting days many a time - sending big sympathy hugs and big GOOD LUCK hugs!! Any company who hires you is going to be SO lucky to have you on their team!!

Sounds like a delicious tofu concoction. I hope you get a job soon and that it is one you will enjoy. I work from home so I really enjoy the flexibility, but I took a part time substitute teaching at the DoD school here so I can have interactions with other human beings.

I was JUST thinking about oatmeal and date recipes. I can't remember what chain store I was walking past that had an ad for oatmeal date bread with cream cheese on it. It looked so good..I wanted to make something with the same combo!

Great toy! All of the food looks good, I am going to try out those cookies ;) Over the weekend I made date bread and it was awesome, the cookies must be amazing!

Whenever I make enchiladas they never ever look pretty! I love all of the good filling and can never close the tortilla properly!

Yum! Those cookies look awesome. Dates are in my top 5 foods for sure!

Thanks for stopping by Destination 26.2! I thought it was awesome that you made tofu echiladas. I actaully tackled tofu-tacos last night and they were delish! And that was my first attempt at cooking with tofu. :)
