splendid salad

Today for lunch I had all the ingredients for one of my FAVORITE salad combos.   DSCF2819

Lettuce+ black eyed peas+ carrot+ avocado+ red onion. Dressed simply with veg oil and apple cider vin.

Actually, I invented this salad at home, and although I think it’s the avocado-black eyed pea combo that is the key, another EXCELLENT ingredient is fresh parsley- at home I dress it with my ma’s homemade dressing that consists of oil, vinegar, a bit of dijon, and HANDFULS of fresh parsley. Highly recommended! But today’s was still good :D

Such a lovely mixture of color, flavor, texture, and nutrient makeup! Protein, fiber, vitamin A, monounsaturated fatty acids. Fabulous!

Whole wheat english muffin, lightly toasted, with cranapple butter, and pear!

Apparently the other day was national Raisin Bran day and I missed it! However, I made up for it today.

This is Total raisin bran (I had a coupon, and this stuff is GOOD! It’s nice, too, I feel like I don’t have to be as vigilant about getting allllllll my food groups for the rest of the day because it gives me 100% of a lot of the stuff I worry about- notably calcium).

I made this Raisin Bran CRUNCH by adding slivered almonds. So delish!

Thanks for stopping by. I pretty much love avocados in anything! And I usually stick to simple olive oil and vinegar combinations as well.

Oh yes! I love it with the almonds added in...like Raisin Nut Bran, which I totally love to bits. Your salad looks gorgeous, too :D

Ooooh, I love black eyed peas!! I've never tried them with avocado, though - the combo sounds incredible!! Thank you for the great idea!! Your salads always have the most vibrant colors and textures!

Now that is a salad! I can't stand when I order a salad somewhere, strip it of meat and get back some wilted lettuce. This looks great!
