plant eater

So Sunday was November 15. 40 days til Christmas, holla!

In my case, the onset of Advent means the onset of temporary, religious, vegetarianism. I’ve been doing it my whole life. Not eating meat allows me to produce some fabulous, more plant-centric dishes. I think people who say vegetarians can’t eat anything are lazy and deplorably lacking in creativity.

Here are some delicious examples of veggie goodness from today:

Oh my God, this stupid thing. Anyone standing outside my apartment probably thought someone was being murdered as I literally spent TWENTY MINUTES banging this on things, shouting obscenities, moaning and groaning, trying to get the STUPID THING TO OPEN.

Fortunately I did, and it was tangy and smoky and luscious.

Mmm quesadilla.

Plus the awesome pairings of apple and PB and green pepper and hummus.

The key to tonight’s dinner was this:

Olive oil+ onions+ low heat+ time= caraaaaaaaameliiiiiiiized.

Caramelized onions+ black eyed peas+ greens (I’ve always made this with spinach in the past but tonight I made it with kale and it rocked my life) is the besssssssssssssssssst.

With a thawed pumpkin muffin (love you!) on the side.

The sweet onion, bitter greens, and smoky, almost meaty black eyed peas make a stellar combo!

This lady at church made it for an Advent potluck, and it’s literally the simplest recipe ever. I mean “recipe” implies that it has directions, and it really is just… simple arrangement of food items. Cook onions low and slow. Add black eyed peas. Add greens. Cook. Boom!
