morocco to israel

I made this for dinner the other night and it was tasty, satisfying, nourishing, and oh-so-easy!

Easy Moroccan Dinner Bowl For One

1 tsp. olive oil

1 tbsp. minced onion

4 oz. boneless skinless chicken breast, cut into bite-sized pieces

1 medium tomato, diced

1/3 cup whole wheat instant couscous (I use the Trader Joe’s kind)

Salt, pepper, crushed red pepper flakes, cumin, and cinnamon; all to taste

Heat olive oil on medium heat. Add minced onion and sauté until tender. Add chicken pieces and brown on all sides.

Reduce heat, add tomatoes and spices, and cook, stirring occasionally, until chicken is cooked through, about 2 minutes depending on the size of your chicken pieces.

Stir in couscous (note: my tomato yielded a TON of liquid. If yours did not, add up to 1/3 cup water), cover your pan, and let sit for 5 minutes.

Fluff with a fork, and enjoy!

Keeping with the flavors of the East, I had one of my favorite treatsies. I picked it up on an impromptu trip to Kupel's, my fave kosher bakery which is in Coolidge Corner, a fabbity fab Boston neighborhood, fyi.

Cakespy did an awesome lesson on Hamentashen. I know prune or poppyseed is traditional, but every time I go there (which is a lot!) the apricot ones scream BUY ME BUY ME BUY ME and I am helpless to resist, because me and apricot jam kind of have a thing.

We must share the same brain....because I literally made this for dinner 2 nights ago, minus the chicken with the addition of sauteed zucchini...same seasonings and same brand of couscous though! Instead of chickens I did chickpeas, which were delish (cooked the cous cous in their juice with a dash of tomato paste and water) Just a suggestion for a lenten rendition!:)
