pasta, yessssss

There are times in life when we just need a big. plate. of pasta. Tonight was clearly one of those times.

I sauteed 1/2 a clove of garlic in some olive oil, added 4 oz chicken, last of the eggplant and summer squash, and 2 oz cooked pasta (Barilla whole wheat thin spaghetti, quite delish). Seasoned with crushed red pepper flakes!

When I was a little girl I used to vow that when I was allowed to eat whatever I wanted, I’d live on spaghetti with butter and cheese. Since my discovery of the concepts of *fiber* and *protein*, I haven’t been living it up quiiiite the way I imagined, but still. This was damn good.

If lunch looks familiar, it’s cause I had almost *exactly* the same thing the other day, but it was just soooooooo good. I did sub peach for apple, ooh, wild me.

The other food highlight of my day was definitely the first PUMPKIN SPICE LATTE of the season! I had it post-gym, with soy, thank you ma’am. It was heaven. It’s too thin and bitter with skim, 2% is narsty, soy is PERFECT!

Oooh, eggplant and whole wheat spaghetti is one of my favorite dishes ever! Your meal looks absolutely perfect!!

I could totally live on pasta with butter and cheese. I used to love that when I was younger.

This pasta dish looks delicious, and I must say, I am so impressed that you are doing all of this cooking as a college student! i was all about the ramen noodles when I was in college. Great job with your blog!!!

The pasta dish looks super.
I love chocolate brownie bars that say they are good for you! Why not, right? Another fav. are the chocolate peanut butter flavors.

We just had almost the same thing last night! I'm so glad you think the trifle sounds yummy. It seems like everyone that I tell about lemon curd has never heard of it... so sad!
