It had been TOO LONG since Pancake Sunday!
Remember that heavenly trip to cracker barrel? Ever since then, I’ve had this guy staring at me from the fridge:
I’m recycling that picture from when I took it at Cracker Barrel, back when I had my good camera, before I lost it due to my own idiocy. Ugh.
But yay blueberry syrup!
I wish I had actual blueberries to put in them, too, but actually at our friends’ last night she had a massive, massive bowl of blueberries and I literally ate like a pint of them. I tend to buy a half-pint at a time and eat them realllllly slowly, so when I have the rare experience of viewing an abundance of blueberries, I go nuts. I love ‘em so much!
Anyway, I wanted whole wheat pancakes and basically followed this recipe, halved, with just a few modifications.
Whole Wheat Blueberry Without-the-Blueberries Pancakes
2/3 c. whole wheat flour
1/2 c. milk
1 1/2 t. baking powder
1/4 t. salt
1 t. sugar
1/2 c. nonfat Greek yogurt (in a stroke of genius, wanting to incorporate more blueberries, I used the top part of a blueberry Chobani, so there was a hint of blueberryness)
1 T vegetable oil
Combine dry ingredients, then stir in wet until just combined. Cook on a greased griddle over medium heat.
They were so beautiful!
This is insane of me: I decided I wanted an eggless recipe because the Eggland’s Best eggs I have right now are so delicious that I don’t want to waste their awesome flavor by mixing them into a batter. I was worried about a recipe without eggs, but these were light and fluffy and rich and flavorful!
Also, the recipe said it made 10… well, I halved it, and made 8 pancakes. I did spread them fairly thin (which I think helped make them so awesome!) but this makes a hefty amount!
My poor mama has a pretty miserable cold (please please please let me not catch it, eesh!), so I made her some miso soup (Miso+ dried shiitake+ boiling water. Easy).
You know what makes everything taste better? Smiley mug!
I brought that up to her in bed, and then she ended up coming down and having pancakes too!
You’re right, we should take one last glance at those pancakes.

You're right - such beautiful pancakes! I can only make ugly ones. I'm okay with that since they still taste good. Speaking of which - I haven't had a pancake Sunday in far too long, as well! Haven't had the motivation, I guess...but seeing as how I've been thinking I should make pancakes soon for oh, the past month or so now, I really probably should, huh? Maybe for dinner some night soon, hehehe.

p.s. just read your about me, and couldn't agree with you more :) I feel bad when I hear people talking about how "it's okay because it's diet." And it's just because they're tricked into believing it's healthy -and just don't realize it's chemicals, hardly food! And doesn't even taste good, at that - I've been there, but luckily I've learned!

haha I love your reasoning for not using eggs. That sounds exactly like something I would do.
Pancakes on the weekend are the best ever. We have been doing a lot of pumpkin mix, but maybe we need to do some of these.

Oh those do sounds very very good! Way to go girl! I wish I had a pancake griddle. Maybe that will be a new breakfast variation I try sometime this week.
