I love a scramble. It uses up whatever you’ve got lying around the refrigerator and it’s a quick,easy, well rounded breakfast/lunch/snack:
Veggies of choice in a cooking spray’d pan (I went with green onion, red pepper, shrooms):
Cook til tender to your liking, reduce heat to low, crack in an egg (or two, or egg beaters, or egg whites, depending on your level of hunger and your willingness to pay stupid amounts of money for fake egg products- mine, frankly, is very low), add salt and pepper, scramble around. Et voila.
I had it on top of a homemade pita!
With limited edition Apple Pie flavored Light&Fit (and OH MY GOD IT IS SO GOOD AND NUTMEGGY!) as part of this complete lunch.
Also, I’ve been trying to snack smart (i.e. measure out a serving of something instead of eating 10,000 Craisins straight out of the 48-ounce Costco bag).
To that end, some new purchases:
Love my wee little serving dishes from Asia. So cute! Also so nice when you want a reasonable serving size of something but also want a lot of food.
The trail mix gets an A+. Sweet, savory, and a wonderful mix of textures. There are dried cranberries that are coated in cranberry seed oil for an extra zing of Omega 3 (I swear Trader Joe’s used to sell just the Omega-3 Cranberries and I LOVED them and I think they must’ve quit doing it which makes me vair sad) as well as pecans, almonds, walnuts, and YUMMY PEPITAS! Trader Joe’s just has a high quality of product too- nuts are fresh and crisp, and the cranberries are soft and chewy.
For those who follow these sorts of things, it has 150 calories per 1/4 cup serving.
Impulse buy at Costco.
The contents:
Like. Crack. It has sweet potato, squash, taro, green bean, and carrot chips and it is LIKE. CRACK. Airy, oily, salty. The ingredient list is fab (just the veggies, canola oil, and a reasonable amount of sea salt) and they are just crazy crazy addictive. This bag is NOT GOING TO LAST. That being said, a serving has 3 grams of fiber! You cannot say as much about most delicious snack foods. 120 calories per 1/2 cup serving.

I had fresh pineapple and thus fresh pineapple juice and pineapple juice is the secret ingredient of my fabulous homemade date nut muffins. I officially have a 5 star review on Recipezaar! So it’s not just me and my loved ones who think they are good! I highly recommend making yourself a batch :D

I am so looking for those Veggie Crunchers. I've been trying to find something, besides potato chips, that my husband can dip into his beloved salsa.

I bought that veggie crunchers once from Costco...It was a HUGE bag. It did not last 3 days! Haha! It is SO addictive, is it not?
That scramble was exactly my snack for yesterday afternoon, served over some whole wheat bread instead of pita though.

I love to scramble too, last night was a greek style scramble with feta and dill! This looks delicious and I love throwing whatever is in the fridge into an omelette!
