Tomorrow night I’m hopping on a plane and flying to GREECE!
We’re going to visit Athens and Delphi (where my grandfather came from), and then spend most of our trip in Crete. We’ll see all the churches, architecture, and art; visit family; hike the Sumeria Gorge; swim in the Aegean; eat lots and lots; and I’m sure do lots of fun and exciting things I am not even anticipating!
I cannot wait!
Obviously regular blogging will probably not happen, but I will take oodles of pictures, culinary and otherwise, and will try to update when I can!
Anyway, back to today. Lunch was my favorite kind of lunch- a Great Big Spread. Lots of colors, textures, flavors, and nutrients!
First I made a gorgeous salad of mixed field greens with shredded carrot already mixed in; some chopped apple; half a can o’ tuna; and parsley dressing.
On the side, some PB shmeared atop the rest of the salad apple half and some spelt toast
Along with yummy peach yogurt and yummy homemade iced tea!
I was also pleased with my afternoon snack. I had a mad craving for a smoothie so I blended a frozen banana, 3/4 cup or so skim milk, and a tsp of wheat germ. SO GOOD!

Looks really healthy! I like the idea of mixing tuna and apple.
