salad kaleidoscope

The star of my lunch today was definitely this BEAUTIFUL salad:

A lot of it was just leftovers, but the combo of flavors (and nutrients, no less!) was killer.

a few cups spinach

1/2 a red pepper

1/4 of a cob leftover corn from last night

a few pieces red onion

1/2 tablespoon or so roasted squash seeds

olive oil, red wine vin, and lemon juice

I’m so impressed with how many colors I got in one salad. It makes it so much more beauteous AND so much more nutritious! Score.

To round out the meal:

Yogurt+ open faced tuna sammie (tossed the tuna with a little minced red onion, salt and pepper, olive oil, and lemon juice and called it tuna salad)

I am such a ridiculous plant eater that I definitely get enough fiber already, but I just like the taste of the Fiber One stuff that I’ve tried (I’ve had that cereal before and it’s DELISH! I just am irked that the sample is so tiny- probably like 1/2 to 2/3 of a cup, so it will be a SUPPLEMENT to a meal/snack, rather than the star).

Finally, I had a dessert epiphany last night that’s too good not to share:

Melted dark chocolate+ dried apricot= yessssssssssssssss.

  9. how fortunate that your leftovers combined to form such a tasty salad! i doubt the things lingering in my fridge would blend so nicely. :) also, apricot and dark chocolate? i've never had the combo, but i will now!

  11. Man, I eat dried apricots like candy. I think I have a problem. Last night at my friend Summer's house, she had some out on the counter and I ate a few and made her hide them hahahhaa.
